The Cooking Tallow….How do I use it??

Tallow is rendered fat from the kidney region of a ruminate animal. It’s called suet until it’s cooked down. After it’s been cooked down, it takes the form of tallow. Tallow can be used in many form, but historically it’s most popular use was cooking. Many fast food restaurants used tallow until the mid 80s. They stopped using tallow for cooking as vegetable oils became more popular and cheaper to cook with.

Tallow has a good shelf life as long as it’s kept in an air tight container. It has a high smoke point, which makes it perfect for frying and baking! I’ve personally never baked with it, but I have had customers tell me they switched out vegetable oil for tallow in some of their baked goods with great success! I do use the tallow for frying EVERYTHING. When I say everything, I mean eggs, veggies, oiling my cast iron for homemade pizza and more. It’s my go-to oil. I have a friend who religiously uses it on their BlackStone and loves it!
